In Sardinia, there is an ancient culinary tradition, made of delicious dishes which are different according to their area of production.
The territory of Gallura, is rich in the great variety of traditional dishes which have their origin in ancient times.
However, those who visit the Costa Smeralda, can not help but taste some of the best Sardinian specialties.

The main course in Gallura is "LI PULICIONI GADDURESI, delightful ravioli of bran of hard wheat,that are particular because they are stuffed with ricotta, eggs, a little bit of sugar and lemon peel, well combined with a sauce flavored with pecorino cheese.
Another typical and really tasty dish and a real “a must” is the "Suppa cuata" (soup), so called because it is hidden by a layer of flavored cheese. This specialty, made with clotted bread and soft cheese, has gained a place very prominent on every traditional menu of Gallura.
Also present in Gallura, as in the rest of the island, there is the renowned and tasteful roasted suckling pig, which according to tradition, is cooked over charcoal and flavored of Mediterranean aromas.
Among the specialties based on fish, we can only mention the "zamino" (commonly called seafood soup), mussels, sea urchins and lobster, very famous and popular also the soup with the Vernaccia.
The desserts, are always prepared with the common use of the honey. Among the most traditional we can mantion:
"Li Cucciuleddhi e meli”," baskets of puff pastry and flour, stuffed with almond paste, chopped orange peel and honey;
"Li Niuleddi ", diamond-shaped cakes prepared with honey, almonds, flour and nuts.
Finally, we must mention also the famous "seadas", pancakes stuffed with fresh cheese, covered with honey or sugar, which from the Gallura have spread all over Sardinia.
